How to make truffle oil at home

Truffle oil is extra virgin olive oil infused with white truffle or black truffle, and it’s also the dressing foodies dream of all over the world.

Finding truffle oil is easy, it’s in both supermarkets and, increasingly, specialised gourmet shops.

And making truffle oil at home is easy too. A new way to devour this exclusive and luxurious ingredient used by the best restaurants in the world.


TRUFFLE OIL RECIPE

When asking for a recipe for how to make truffle oil, the answers were always the same: “Extra virgin olive oil and high-quality truffle”, “The best you can find”, “Buy fresh white truffle, and if it’s covered in earth, even better”. High-quality and freshness were emphasised time and again.

There are two simple ways to make it:

The first method is the easier method but it doesn’t last as long. Grate your truffle slices and add them directly to the oil. Then let it sit for a few minutes in the fridge, which will balance out the flavours. I like to use it with fresh pasta: just before serving, I prepare the necessary amount of oil and use a few drops for dressing. I don’t recommend storing it.

The second method is through infusion. Grate thin slices of black truffle, add them to the olive oil, and let it infuse. In other words, heat it in a saucepan over a low heat (55°C), for about 5 to 25 minutes max. Enough time for them to release their flavour and aroma.

Average quantities: 
For 1 litre of olive oil, use 30g of truffle slices.

If you want a less intense oil, you can reduce the truffle quantity.

Then, leave it to rest and cool for 48 hours. You can also leave it for less time, depending on your preference.

You can strain the truffle slices left in the oil, although I like to keep them at the bottom of the bottle.

WAYS TO USE TRUFFLE OIL

Think of truffle oil as a “traditional” condiment or dressing for a finished dish – simply drizzle the truffle oil over the food. Remember that it’s not a cooking oil, as the heat will spoil its flavour.

To conserve its aroma, store the bottle of oil in the fridge.

What does truffle oil taste like?

The intensity of the flavours. White truffle is delicate and has a touch of garlic. Meanwhile, black truffle has an earthy, more intense flavour. That’s why they tell you only to use a few drops when adding the oil to your dishes.

White meats, delicate flavours: fish, seafood, rabbit.


WHAT IS BLACK TRUFFLE OIL USED FOR?

Its intense flavour goes with beef, mushroom stews, vinaigrettes.

Both oils will luxuriously season fried eggs, risottos, potatoes, cheeses, pasta, mashed potato – you can even add a few drops over a bowl of popcorn for an authentic delight.
